Rhubarb Crumble

If you've never had rhubarb I hope that you will try this recipe. It is delicious. You can find it in the latest edition of Joy of Cooking. 4-5 stalks of rhubarb, If there are any leaves on the rhubarb, remove and throw out or compost them. Cut up remaining stems in 1 inch pieces. Sprinkle with vanilla sugar and place in a pie plate. Preheat oven to 375 F. In a separate bowl, add 3/4 cup of flour, 1/3rd cup of sugar, 1 tablespoon cinnamon, 1/4 teaspoon nutmeg, 1/2 teaspoon salt. Mix to combine. Cut in 1/2 stick of cold butter until the butter is in small pieces. Pour over rhubarb and bake for 50-55 minutes. Enjoy while warm. Note: Two years ago I planted several rhubarb plants and this is the first year that I was able to harvest the stems. I find that if you twist and pull the stems that are nearest the ground, they snap off.
