Who would have thought that you could bake in mason jars? I found this fine recipe and tried it (with a few modifications.)
Here it is:
In a mixing bowl add:
1 Tablespoon dried yeast
1 Tablespoon Agave syrup
3 Tablespoons warm water
Let stand 5 minutes.
In a separate bowl combine 2 1/2 cups whole wheat flour, 1 cup ap flour, 1 teaspoon salt. In a separate bowl mix 1 cup buttermilk and 1 jumbo egg. Beat egg in buttermilk for a minute.
Add buttermilk mixture to flour mixture and beat for 2 minutes. Mix in the 6 tablespoons butter, one at a time. Change to doughhook and beat for 5 minutes. Remove dough and oil bowl with a teaspoon of olive oil. Put dough back in and turn it over to make sure it is all oiled. Cover with a towel and let rise for an hour.
Take a dozen glass mason jars and brush the inside with oil or melted butter. Sprinkle cornmeal or oatmeal on the bottom of the jars. Punch dough down gently and cut into 12 pieces. Roll them into a small ball and place in the jars. Let rise for an hour.
Brush with melted butter and sprinkle the top with a little olive oil. Bake at 400 degrees F. for 22 minutes. Remove and let cool.
